Raspberry Cupcakes with White Chocolate Frosting

White chocolate has always been my favorite frosting of all time. In fact, the first cupcakes I frosted were using white chocolate. However, I have always been so wary about using white chocolate in baking. Trust me, they are very, VERY temperamental creatures!

I remember I once had to bake 300 cupcakes with white chocolate frosting in one go (on my feet for 18 hours!). It was torture. I asked myself over, and over, what have I done? I was very new to baking then and the science behind baking was completely foreign to me. Melting white chocolate is no easy feat.

But, after learning more about melting white chocolate, it couldn't be any easier than popping it into your microwave oven for a few seconds. Pair it off with raspberry and voila! You have an absolutely wonderful Raspberry Cupcakes. :D

Baby Chef

Friday's here again and it means that it's baking day! :D

But today, it's a little bit more special. Today, my little Baby Chef, Ryan, decided to hijack the kitchen completely. Ryan is four years old and absolutely LOVES cakes. My cakes specifically. :) He's my biggest fan and I'm so proud to share that he has shown interest in baking since he was 3 years old. I have always believed that kids should be given a little bit more trust and let them show what they can do. He's always helped me in the kitchen (though, I don't let anyone, I repeat, ANYONE, within a five-mile radius of the kitchen when I'm baking for you guys), so I let him explore his curiosities. Trust me, he's just like me when he bakes. He does not let me do anything!!! The only help I did was do the measurements and putting the muffins into the oven.

We're now waiting for the second batch to bake. The first one's here:

Banana Muffins fresh out of the oven! (Oh, those empty slots are because Ryan scooped the mix into them without the wrapper hehehe!)

Obsessed with pink+green!

Remember when I told you I've been dreaming about cakes? Well, I whipped one up soon after! I saw this cute photo of a cake online and decided to bake one (almost) exactly like it! To be honest, I baked it only because I really loved the color combo! Pink and green.

It's been a few months now that I've started noticing all things pink+green. I've also been putting of kain shopping (pink+green chiffon) for work baju. And now, it's too late as tailors no longer accept requests as they're all drowned with raya requests! boohoo!!

Anyway, yes, pink+green.:3

The cake was basically a cherry cake with swiss meringue frosting. I shall not tell you how rich this frosting is (and the amount of butter I used!!!!!). I am sure Weightwatchers would get a heart attack if they found out! Hehehe!!!

Joking aside, I believe in moderation. I LOVE butter and simply cannot live without it. But I do worry about my waistline too (and *cough* my arteries for that matter). But what is life without glorious, luscious butter? : D

All this "healthy" talk reminds me of the sports bra I recently bought for running (or walking, in my case). Guess what color it is? ;)

OOH!! I am also excited to announce that we're now available on mobile version (easier viewing, yayyy!).

Have a lovely jubbly Friday people : D

Dreaming about cakes

I've been thinking of baking a lot lately. I mean, a lot more than usual. I've been thinking about cakes.

Yes, my dear friends, cakes. And really really pretty cakes! It's a transition I've been craving to move into. I suppose it's bound to happen. After all, I wake up to thoughts about cakes, read about cakes and dream about cakes. Why, the wallpaper on my office pc is a photo of cakes!

I've also been toying with the thought of taking this love for baking up a notch. Though, I am not sure whether I am ready to leave my comfort zone. But life is about risks, after all. : ) I suppose I just need to do a lil' bit more research before taking the leap. : )

Now, where's that whisk?

Happy birthday my little star!

Hey all!

I was requested to bake a two-layer brownie for my nephew's kindie birthday party. I ended up with a marshmallow cake! Haha! Well, you can't go wrong with chocolate and marshmallows. LOADS of marshmallows.

I am happy to report that I now have 30 little fans! :D

Happy birthday Eaman. I love you my little star :D

S'mores Cupcakes

I've been dying to use my new kitchen blowtorch and what better excuse than to bake S'mores Cupcakes :D

I first heard about s'mores when I was in my teens, reading Archie Comics. Yes, Archie Comics has introduced me a lot of American treats. Back then, we didn't even have marshmallow in Brunei! So, yes, just like the Ho-ho Cupcakes, I decided to whip one up myself!

Hope you love them too!

Marshmallowy goodness!

*frosting contains raw egg whites. Not advisable for those with allergies, babies, toddlers and expectant mothers. :3

Tiramisu: Improved!

It's been a while since I last posted about Tiramisu. Personally, I find it difficult to find a store-bought one to my liking. I suppose they never make the coffee flavor strong enough for me.

I've made some adjustments to the recipe and I hope you'll find it more luscious than ever! I'd love to make this into individual portions one day :) Wouldn't that be lovely?

I want to hear from you...
